Sassafras is such a great word. You just can't say it without being, well, sassy: "Sass-a-frasssss". Now, who here can tell me was sassafras actually is (besides being the key ingredient in file powder? 75% of you got it right.) Actually, sassafras as we is the leaf of the sassafras tree, dried and ground. It's used as a thickener and a spice especially in Louisiana dishes like gumbo. (Nope, neither cornstarch nor saffron are key ingredients -- if ingredients at all -- in file powder.)
