A New Big Pig

From the Oakley's Bistro newsletter:

...Congratulations: Chef de Cuisine Tom Smith took top honors at the Indiana Pork Producers Association's 2005 Taste of Elegance. Competing against nine of Indiana's best chefs, Tom's (as in our "Tom's Bacon") winning entry, "World Tour of Pork," featured three complementary pork presentations including: Pork Shabu-Shabu with asparagus and grapefruit; French Country Sausage with green grapes, savoy cabbage and pork jus; and Maple Smoked Pork Shoulder with toasted white cornbread and balsamic glazed shallots. Chef Smith will represent Indiana at the national competition in May making OAKLEYS bistro a "two-in-a-row" winner as Chef Oakley represented Indiana at the 2004 national competition!


For those who follow this sort of thing, Chef Steven Oakley has represented Indiana for the past couple of years. Tom's continuation creates a pork dynasty similar to The Coach House in Oklahoma City. Several different chefs from The Coach House have fielded the winning entries in the national competition for the past several years just narrowly beating Chef Oakley a few times. Hopefully, Tom will send those Okie chefs home empty handed this year. The National competition is in April.
