What I Want: Caillettes

From a report of a recent fete du cochon in California. (A fete du cochon is a party for butchering a whole pig.) What I want? Caillettes -- burgers made from the liver, kidneys, and heart with diced duck fat and lots of garlic. The mixture is ground, then made into patties, and wrapped in caul fat before they're slowly roasted in the oven.
